How does Ireland keep their votes secure and ensure they aren't tampered with?

Are the votes counted all in one sitting? Do they lock up the votes overnight? Do they count day and night (24 hours/day) until the counting is done?

I know even Canada has recounts that take place days later, however, the results of our provincial and federal elections are determined during election night. If judicial recount takes does take place days later, we will be suspicious if the results are way off.
