What I want to know is who's cracked enough to think the dolphin has any valid concept of what a human marriage is.

It is a bit arrogant of us humans to think that animals think exactly the way we do. They may certainly experience similar emotions, but we should not confuse emotions with thoughts.

Chill. It appears that those two have worked out some new form of union which respects the specificity of the two mammals thus engaged. Those symbols are bogus anyway. A Dutch tv-program checked out a couple of them. They tried to trace the cans to their origin, to the boat on which the tuna had been caught. It proved difficult, if not impossible.
If I can remember correctly, Mexican fishermen aren't very much into this dolphin-friendly tuna. A lot of dolphins still die in their nets.
Maybe some or even a lot of dolphins have been saved by dolphin-friendly tuna. But if you open a can of dolphin-friendly tuna and think you can be 100% sure no doplhin died in the catching of this tuna, you might be disappointed by the truth...

There's an FAQ out there that answers the question of what to do if a dolphin wants to mate with you. Basically mating with a male dolphin would kill you, with a female would get your nose bruised. Ok, just go to the web site... I also heard that male dolphins can be quite violent.
