I try and be a 'simple liver'. Unfortunately, often my appetites get the best of me so I far from an example for others.
Today I am making fruit leather. Blending strawberries and bananas, spreading them onto dehydrater racks and tomorrow 'waalaa' dried fruit sheets. The problem I have is with the wax paper I use on the dehydrater racks. If I am not diligent and catch the leather at the right moment it will cook onto the wax paper. Does anyone have a foolproof strategy for drying liquid fruit puree in such a way that it is easy to seperate from the wax paper? Is one side better than the other (glossy/mat)? I once heard someone talk of using a bit of oil but I have never tried it.
